At it Again

The sick bug is at it again, except this time it attacked my stomach instead of my throat. Very nice of him, right?

Here is a yummy recipe to try while I spend my days in bed. My family thought they were delicious!

Quinoa Granola Bars

1

1/2 c. dry quinoa
2 c. oats
1/4 c. shredded coconut
1/4 c. slivered almonds
1/2 c. peanut butter
1/2 c. honey

While the quinoa cooks in the rice cooker, toast the oats, almonds and coconut in a 350 degree oven for about 10 to 15 minutes.

Once quinoa is done cooking, combine on the stove with peanut butter and honey until just melted and mixed well.

Combine the quinoa mixture with the mixture toasting in the oven. Then press firmly into a greased pan and bake at 350 for about 20 minutes. Let sit for at least 30 minutes before cutting. Enjoy!

*makes about 15 bars at 150 calories each

  1. sorry you are sick!! thanks for sharing the recipe...I have always wanted to make my own granola or power bars...i really just need to pick a recipe and try it and this one seems simple enough :)

    I also have never tried quinoa but this is the second time I have read about it this morning so I am seeing a trend that maybe I should try that as well :)

  2. Sorry you got a stomach bug:( That stuff always seems to hit me at the end of the school year when I'm stressed:(.

    Yum, this granola bar recipe looks pretty awesome...I would have never thought of putting quinoa in granola bars! I usually just make a quinoa "salad" and throw whatever yummy things I happen to have in my cupboard/fridge that day in there:).

  5. This is awesome! I literally have loads of quinoa and we never use it!
    When we do though, our favorite recipes is for black beans and quinoa.

  6. Mmm these were delicious!! One comment, mine did not go hard at all like the granola bars I am used to, I cooked them for about 35 mins and they still turned out cake like? Do you think my quinoa was cooked too much? Any suggestions? That aside, they were still yummo!

  7. Trisha! I'm so excited to make these this week for a healthy snack for the family. We use so many of your recipes to help us with our goal to eat healthy---thank you! I have a question: I've never cooked with quinoa before, so when cooking it in a rice cooker, do you add the same amount of quinoa and water like you would if you were cooking with rice? Also, I really appreciate that you posted how many calories per bar! Thank you!
